Hanging Rock Winery Jim Jim Pinot Noir is made with an early ripening clone of Pinot Noir, specifically chosen so the grapes survive the Macedon Ranges' cold climate.
The fruit, including some left as whole bunches, is open fermented with foot plunging twice daily. The wine matures for 12 months in new and seasoned French oak barrels. Only the best barrels are chosen for the final blend.
Crimson purple, Hanging Rock Winery Jim Jim Pinot Noir is layered and complex with berry flavours, floral notes and silky tannins. Cellaring potential is seven years.
